Grilled Watermelon and Feta Avocado Salad
A quarter of a large watermelon
2 Avocados
A package of feta, I prefer the feta in the brine but get what you can
1 Lime
1/4 cup honey
1 tbsp olive oil
Fresh mint or cilantro
-Warm up grill or skillet (grilling is best) - Medium heat
-Cut watermelon into triangle slices
-Zest lime. Mix zest, honey, and olive oil in small bowl. Brush mixture onto both sides of the watermelon slices.
-Cook slices until slightly browned, about 1 to 2 minutes on both sides. Transfer to plate to cool
-Cut avocado into chunks, throw into a bowl with crumbled feta.
-Cut cooled watermelon into square chucks, add to bowl.
-Squeeze lime juice into bowl, mix until coated.
-Add shredded mint or cilantro leaves on top
-Serve!
