Beets and Goat Cheese Salad

Dressing:
1 tbsp red wine vinegar
2 tbsp olive oil
1 garlic clove, smashed
1 tbsp salted capers, chopped
Salad:
4 canned or jarred beets
2 cups green beans or some other greens
2/3 cup goat cheese
-Mix dressing ingredients in a jar, season with salt and pepper, and shake.
-Chop beets, combine all salad ingredients in a bowl and pour dressing over top
-Mix to combine
-Serve!
