Mango Salsa
From Audrey Bock!
2 cups chopped, pitted, and peeled mango
1 cup chopped red bell peppers (or tomatoes)
2/3 cup chopped green onions
1/4 cup chopped fresh cilantro or mint
2 tbsp fresh lime juice
4 tbsp olive oil
-Mix all ingredients in a bowl.
-Season with salt and pepper
-Cover and chill
-Serve with pita or chips!
