Apple-Berry Ozark Pudding

1 egg

3/4 cup sugar

1 1/4 tsp baking powder

1/8 tbsp salt

1 tbsp lemon juice

1/2 cup chopped apples

1/2 cup nuts

1/3 to 1/2 cup seedless red raspberry preserve

Whipped cream to top

-Preheat over to 350 degrees F

-Beat egg well in a small bowl with an electric mixture until lemon colored and thick.

-Gradually add sugar, beating until mixture is very light and creamy

-Combine flour, baking powder and salt and sift into egg mixture and blend well

-Pour lemon juice over apples

-Fold apples and nuts into egg mixture

-Pour into a greased and floured eight inch pie plate

-Spoon raspberry preserves over top

-Serve warm with whipped cream or vanilla ice cream (or both)

-Bake for 30 minutes
