Ashanti's Banana Bread
BANANA BREAD, DUDE? HELL YEA
1 2/3 cup flour (white or whole wheat)
1 tsp baking soda
1/4 tsp cinnamon
A pinch of nutmeg (don’t add too much or it won’t be moist!)
A pinch of ginger powder
1 cup sugar
2 eggs
1/2 cup oil (preferably canola oil)
3-3 1/2 overripe bananas
2 tbsp sour cream
1 tsp vanilla or almond extract
Nuts/seeds and
-Preheat over to 350 F
-Line loaf pan with parchment paper. If you don’t have parchment paper you’re kinda SOL, get some at the dollar tree
-Sift flour, baking soda, cinnamon, and salt together in a large bowl. (Or just mix with a fork to get clumps out)
-In a separate bowl, cream eggs and sugar until fluffy. Drizzle oil in slowly. Add the bananas, sour cream, and vanilla. Barley mix this! Just combine until smooth and bananas are broken up
-Fold wet ingredients into dry ingredients. Do not over mix!
-Pour into pan and bake for 45 minutes to an hour. Sprinkle nuts or seeds on top.
-Optional, add a quarter cup of dark chocolate chunks because why not. You also add a couple shots of bourbon to the mixture for some adult fun.
