Claire's Peanut Dip
From the kitchen of Claire Dunn! This is an addictive and healthy dip!
-1/2 cup smooth peanut butter
-1/4 cup minced onions
-1/4 cup fresh lemon juice
-1 tbsp soy sauce
-2 tsp minced garlic
-1 tsp ground coriander
-1/4 cup minced parsley
-pita chips and/or crisp crunchy veggies
In a blender or food processor, combine all ingredients and blend them them for about one minute or until mixed. Serve with veggies and chips at room temperature.
