Summer Sauce Over Pasta
This is from my mom. We used to grow all this stuff in our garden and she’d whip this up for a nice summer meal. It’s heckin great.
-8 Roma tomatoes
-1 cup sun dried tomatoes, drained of their oil
-1 whole wedge of Parmesan cheese
-5 to 6 cloves of garlic
-Handful of fresh basil
-A pinch of red pepper flakes
-1 to 2 tbsp sugar
-1/4 cup olive oil
-Chop up fresh and dried tomatoes
-Mince garlic
-Heat up the olive oil in a pan. Throw in garlic and sautee until golden brown.
-Throw in all the tomatoes. Cook until juices have been released. Throw in the fresh basil.
-Add the red pepper flakes. Start conservatively, because as the flakes cook they will become hotter. You can always add spice later.
-Add the sugar. Let simmer for 20-30 minutes. Taste and season for your preference.
-During this time, cook the pasta. It can be any pasta you’d like. Cavatelle is recommended for a large crowd.
-Serve in a large platter or low, wide bowl. Layer the pasta on the bottom and pour the sauce over top. Add the parmesan on top. Save some parm for table serving.
-The sauce is watery, so this is nice served with a good loaf of bread.
