Cast Iron Fish and Potatoes
This whole meal is made in cast iron skillet, which is why I like it. This recipe is for two.
6 oz white fish fillet - sole or tilapia work well
About a pound of small rainbow potatoes
1 white onion
2 cloves garlic
1 tsp rosemary
1/2 cup panko crumbs
1/2 cup cheddar or parmesan cheese
Coconut oil
Salt and Pepper
-Preheat oven to 400 degrees
-In a small bowl, mix panko crumbs and cheese along with a couple tablespoons of coconut oil. Mix and set aside.
-Slice potatoes and onions in to thin rounds
-In the cast iron skillet on medium, cook potatoes for about 5 minutes. Then throw in garlic, onions, and rosemary and cook until soft and translucent. Add a pinch of salt and pepper
- Layer the fish on top of the potatoes and top everything with the panko/cheese mixture. Be sure to cover the fish and potatoes evenly to seal in moisture
-Using an oven mitt, transfer the pan to the oven. Bake for about 12 minutes. Check the fish with a fork to be sure it’s cooked all the way through (should be flakey)
-Eat it!
