Sweet and Boozy Skillet Yams
These are Ashanti’s cast iron skillet yams. She brought these in one day and I begged her for the recipe for like 4 months:
3 ½ yams, peeled/washed/sliced
1 cup brown sugar
¾ cup white sugar
½ tbsp cinnamon
¼ tsp ground ginger
¼ tsp ground nutmeg
½ tbsp vanilla
1 tsp almond extract
½ tsp salt / a pinch
6 tbsp butter / whole stick
A splash of bourbon (optional)
-Peel yams, cut into slices
-Heat skillet medium low. Add 4 tbsp water and prepped yams
-Add all dry ingredients. Do not mix!
-Cook for 18 minutes with lid.
-Add wet ingredients, vanilla and almond extract
-Flip all potatoes. Cook until all potatoes brown and are fork tender.
-Remove lid. Cook for an additional 5 minutes
-Remove from heat and cool (sauce should thicken). Add all butter and a splash of bourbon (optional) cover with lid.
-Optional : top with walnuts or pecans
-Serve!
